Spicy Red Lentil Spread

1 cup red lentils

Prepare the lentils. Put them in a medium pan with 2 cups of water over medium high heat. Give a boil and simmer till lentils are soft and liquid is taken in, about 15 minutes, stirring regularly (you might need to include more water as it’s cooking).
Scrape the hot lentils into a medium blending bowl and mash together with the cornmeal till a smooth, consistent texture is accomplished. Include the cumin and cayenne and mix. Reserve.
In a little sauté pan over medium heat, prepare the onions till soft and on the edge of turning brown. Include the tomato sauce and sriracha and let simmer for a couple minutes to combine the flavours. Scrape into the lentil mix and stir to integrate.
