Healthy-ish breakfast cookies!
So, yes, they resemble a cookie-version of banana bread and energy bites and granola bars, and YES, they are as oaty and wholesome and tasty as they look.
Likewise, those are blueberries AND chocolate chips! TOGETHER. In a cookie. I do not even understand myself today. Reader aka Cookie Maker Extraordinaire Lindsay worked her magic on us this month and persuaded us to get healthy-ish with these little nuggets, and it absolutely worked. I put blueberries in my cookies with chocolate chips. Consider me charmed.
This month’s dish originated from Lindsay (not, like, ME Lindsay … THIS Lindsay):
As we went through all the submissions this month (THANKS !!!), we were not truly trying to find something healthy or healthy-ish. We were simply trying to find desserts. However I believe we were all so fascinated by these healthy-ish cookies, and in the middle of a stack of lovely, decadent, full-on cakes and pies and bars and beyond, we simply could not stop considering them.
Would they really taste excellent? Would we really like the mix? Would they provide us authorization to consume cookies for breakfast?
So we conserved all the cakes and pies for another rainy day, and we simply went on and made these little bombshell healthy cookies. Group approval score? High.
The important things I like about these is that you can truly include nearly anything to them.
Unsure about the blueberries and chocolate? That’s fine I wasn’t either in the beginning. Opt for blueberries and white chocolate. Or nuts and dried fruit. Or chocolate and flaked coconut (MY PERSONAL FAVORITE). You can sort of do whatever you desire with these little golden treasures! You’re the one in charge. You make it take place.
Likewise definitely level playing field to consume for breakfast. Or 2nd breakfast. Or 3rd group breakfast.

Healthy-ish Breakfast Cookies
These healthy-ish breakfast cookies are made with an oat, banana, and peanut butter base and can be loaded with any mix-ins that you like! Individual favorites: flaked coconut and chocolate chip.
- Make the dough: Utilize a hand mixer to integrate the banana, peanut butter, honey, coconut oil, and vanilla. Mix in the dry components. Fold in the chocolate, blueberries, or other mix-ins.
- Prepare yourself for baking: Chill the dough for about 20 minutes. Pre-heat your oven to 350 degrees and line a baking sheet with parchment.
- Bake: With damp hands to avoid sticking, roll the dough into 16-18 balls. Bake for 12-15 minutes (depending upon your oven and the size of your cookies). They need to remain great and round, however you can flatten carefully with a spatula when you take them out of the oven if you desire. YUMMM!

If you are utilizing a really ripe banana, you can most likely get away with less sweetener!
I like keeping these in the freezer, and, like, really consuming them out of the freezer. I simply have a feature of frozen cookies. Anybody?
