What a gorgeous sight.

A minimum of, to me it is. Velvety, thick, somewhat tacky (okay, perhaps actually tacky), and a little bit spicy produces an ideal vegetarian root veggie stew.

The only error I made in this dish was not purchasing all my root veggies at the Farmer’s Market. Are the Farmer’s Markets in Minnesota even open any longer? Sigh. Gone are the days when the greatest thing on my program was going to the Farmer’s Market.

You will require a great deal of root veggies for this stew, so if you do have access to the Farmer’s Market, stock up on potatoes, parsnips, turnips, and rutabagas!

And prior to you go presuming aspects of my level of food understanding … I have never ever even touched a rutabaga prior to.

It would be an embarassment not to serve this soup in a cute soup pot (with cover)! Even better if it’s made by a member of the family!

Velvety Root Veggie Stew

This root veggie stew is an ideal vegetarian dish for remaining warm and comfortable. Yukon potatoes, rutabaga, turnips, cream, and rosemary. Yum.




  1. Heat oil in a Dutch oven over medium heat. Include onion to pan; cook 5 minutes or up until tender, stirring sometimes. Include garlic and 2 teaspoons rosemary; cook 1 minute, stirring sometimes. Stir in potato and next 5 components. Give a simmer; cook, covered, 20 minutes or up until veggies hurt.
  2. Location 3 cups veggie mix in a mixer. Get rid of center piece of mixer cover; safe and secure mixer cover on mixer. Location a tidy towel over opening in mixer cover. Mix up until smooth. Go back to pan. Stir in cream, pepper, and salt.
  3. Preheat broiler, leading with cheese, and broil up until soft and melty!
